Pastificio Fabbri: artisanal pasta factory in the heart of Chianti.
Since my first visit I felt in love with this artisanal pasta
I knew about this Artisanal Pasta Factory during one of my tour around Chianti side. I am from Siena but, as often happened to people who live in one area, it is unlikely to know each angle of my surrounding.
Pastificio Fabbri is located in a little village in the middle of Chianti (Florentine side), called “Strada in Chianti”. When I rang the door bell of the main entrance, in the central little square, a smiling girl opened the door and I entered in a little but huge wonderland ! Virginia, the charming girl, explaining me everything, from the “Pastificio” origins to the practical examples about how, in the old ages, they grinded the wheat.
There is a museum in the first room and it is born from the love and passion of its founder Giovanni Fabbri. The museum presents utensils belonging to his family and passed down from father to son, as well as testimonies of Tuscan country life, several antique pieces used throught the centuries for pasta production, among which a collection of horizontal and vertical presses, built between the second half of the 1700s and the first half of the 1900s.
The museum is divided into two sections. The first is designed for lectures
and can hold up to 30 people, the second is dedicated to the exhibit and
Virginia explains the machines and utensils on show.
After the Museum she lead me to the production area where I could admire the secrets to produce Fabbri pasta, the historical evolution of the wheat crops and the stunning cellars ! Opening one door of those cellars I remained astonished by the movement of spaghetti, hunging on specific hungers. Low temperatures are used to preserve the wheat properties and she explained to me how important is to use low temperatures during
the production process, and the health benefits, backed up by scientific research, resulting from eating old wheat. Each visitor will finish the
tour culturally enriched and with a courtesy packet of pasta. Virginia and I have been started collaborating each other with my big pleasure.
