A Special Mother’s Apple Cake

My favourite recipe ever, shot by me with the style I love

    If there is something that takes me back to my childhood is the smell of my mother’s apple cake while it is cooking.

    I would have never stopped eating it and also never stopped liking the bowl where some cream left over.

    During the years I learn to cook many different dishes from the simplest to the most elaborated recipes, but this one it has remained my favourite one!

    When I propose Apple Cake as a dessert I don’t draw the attention of the people, because sometimes they think it is the “usual” cake, maybe outdated. But they don’t know what they are missing !!! In fact my mother’s preparation it is a little bit different from the typical preparation and she has her own way to insert sliced apple into the cream. You should try to prepare it with her and me, maybe in a dinner or cooking class you will attend, why not?

    Moreover,  to celebrate this delicious cake I dedicated to it the final task of my foodphotography course with one of the most expert blog food photographer in UK. I will join her link as soon as she will post my picture ;-).

    Prepare the ingredients

    Peel and wash the apples. Cut them in half and slice the halves into slices of about 1/2 cm.
    Sprinkle them with a two lemon juice and soften the butter.

    Whisk the ingredients

    In a medium bowl whisk the sugar and the melted butter for few minutes.
    Separate the yolks from the egg whites and add the yolks to the butter and sugar. Whisk together until the mixture is pale yellow.
    Add the cake flour and the baking powder and mix to incorporate.
    In a separate bowl whisk the egg whites until stiff and add thoroughly to the mixture.

    Final step

    Place the mixture in a 24 cm. tart pan that has been well buttered.
    Insert, in a diagonal way, the sliced apples , starting from the centre and continuing until the end in a spiral way.

    Bake at 160°C for 40 minutes.
    When it is baked dust the top with powdered sugar after it has cooled well.
