      Back from Naples today I have decided to prepare the favorite dish of my daughter … “Gnocchi alla Sorrentina”.

      You can see how to make dumpling on my recipes.

      The sauce is very easy to prepare but you have to use the right ingredients. Ripe tomatoes, fresh basil leaves, good extra virgin olive oil.  I have had the fortune to buy them in Sorrento where I spent my Easter Holiday with my family and this is the reason why the result has been perfect !

      Prepare the sauce and grill the gnocchi into the oven

      Cover the bottom of a saucepan with extra virgin olive oil with 2 cloves of garlic . Dice the tomatoes and when the garlic get brown add them in the saucepan with 6/9 leaves of fresh basil. Let boil for about 20 minutes.
      Pour a third of the sauce on the bottom of a baking dish large enough to accommodate the gnocchi. Boil the gnocchi until they float (2 to 2.5 minutes), remove with a slotted spoon to the baking dish.
      Top the gnocchi with the remaining sauce, drizzle with Parmesan Cheese and diced mozzarella cheese.
      Heat the oven at 250 °C and grill them for 5 minutes.
      Dish them out hot and with stringy mozzarella cheese .
