Fetta col cavolo or Cavolo con le fette?

      Do you know that fetta means a slice of bread? Usually, when we say Fetta it is implied that we speak about bread.

      Fetta col cavolo is the alternative to Panzanella estiva that is more a summery dish and also more famous than this recipe.

      The kale is available only at first chill, just when the EVO oil is ready, already pressed, essential for this tasty dish.




      10 minutes

      Boil the kale

      remove the central stalk from each leave, wash each leave under the water.
      Put the kale inside a pot with cold water, add some salt and bring to a boil.
      When the kale is soft, drain it, let it cool and squeeze well.
      Don't throw away the water!


      Cutting Soaking Drizling and Serving

      Slice some bread slices and toast them. Rub a clove of garlic on the top of a side, soak it in the kale water. Cut roughly the kale, lay on the top, drizzle with salt, pepper, and extra virgin olive oil. Serve on a tray
