You can dress potato dumplings with whatever you like..in Tuscany we love them also with fish ! Fish is another resource we have in this beautiful  region and we like to eat it in Summer time but also during the winter when we want to celebrate a particular event  or simple because you feel like fish !

You need to finely chop parsley and garlic and put them in a wide skillet with olive oil. Let them simmer till the garlic is gold then a spalsh of white wine, chopped tomatoes and salt. Take the prawn’s skin off and add to the mixture.

Let them cook for 5/10 minutes . Then add dumplings previously boiled in salted water.
