    During a dinner an american person asked me if we, as Tuscany people, are used to eating chicken. In fact we cook many different kinds of meat every day they usually don’t cooked. So I wrote to him this recipe that is one of my favourite for chicken. The herbs and dressing give this meat more flavor.

    You can cook this under the oven grill, on a barbecue or also in a skillet covered with a lid. Make sure that the grill and the skillet are very hot before putting the chicken in.

    Prepare the chicken

    Cut the chicken along the backbone. Open the chicken out to flatten it completely. Make slashes with a sharp knife across the thickest parts of the breast and thigh meat to ensure that they cook through.

    Herbs and marinating

    Chop up the sage and thyme leaves. Make a marinade with the olive oil, garlic, lemon juice and the chopped herbs and splash over the chicken. Season with salt and pepper and leave to marinade for about an hour.

    Grill the chicken

    Shake off any excess marinade from the chicken and put it onto the grill or into the oven or in the skillet. Turn the chicken over after 10-15 minutes and brush with a little marinade. The total cooking time should be about 30 to 40 minutes, depending on the heat .
